makin pizza

In the interest of conserving money, Patrick and I decided (ok, I did) that we should become Minneapolis' #1 best homemade HEALTHY pizza making family.... so on Saturday we gave it our first try. And although the crust was healthy -- whole wheat with cornmeal -- the toppings were not!! BACON CHEESEBURGER pizza! (We had some leftover burgers from a few nights earlier.) I know. I know. The irony!!
Cy helped a lot. He made his own mini pizza. He rolled the dough, smeared on the sauce and added his own toppings. He took a real interest in eating everything (including the dough!) before it went in to the oven.
The pizzas turned out terrific!!! It's the Whole Wheat crust recipe from Cooking Light in case you want to try it!
We are excited to perfect our craft. Maybe you can stop over for a slice sometime! Next week... turkey artichoke and spinach!
And this time we used Ragu... but I'm looking into making our own sauce too! Next we'll be buying a cow and making the cheese!

I Can't Believe We Made Him!

Cy has just gotten into pretending. He loves loves loves to pretend he is a dog. He and Jackson sit side by side and I give them each commands like sit, speak, high five, etc. They perform in unison. Another scene I must record on vid sometime soon! Here he is drinking out of his dog dish... don't worry Jackson isn't allowed to drink out of it! Today I had to put a leash on him and take him on a walk outside. Patrick is not thrilled about this new game but I LOVE it.

About a week ago I was sitting on the floor next to the tub, giving the toddler his bath when he said "Poop!" He said it like he meant it. I asked if he wanted to try it on the toliet. He said yes & BAM we had a kid who just dropped his first little brownie into the toliet! I was sooo proud that I sent a pic to Patrick and all of our family! Since then, there's been a few more similar instances and everytime it leaves me speechless. Can't believe he wants to poo in the loo! So I bought a "poop chair" and some pull-ups and we aren't full fledgedly potty training... but we definitely aren't saying no when he asks to go!
The other classic phenomenon is "Cy lingo." He likes to show us how smart he is by putting "two-and-two" together and usually it's pretty darn funny. For example, in one of his favorite peek-a-boo books he always says "hot" when we get to the chicken because to him, chicken is always hot on his plate at dinnertime! And then at nap or bedtime, he will start saying "No Hush!" when he gets the feeling we are going to start putting him down. Hush! is one of his favorite bedtime books...

if you look closely you can see my lips are blue! we had just completed our first dive and were heading to do our second. the water was warm - 72 degrees f - but when you are down there for 40 minutes you still get cold at the end!

Dear Cy,
I do now know where to start. Your family has been up to A LOT the past two weeks! As you may recall, the last time I wrote, you and I were coming off a bad flu/sinus infection. Well, a few days after you and I both visited the doctor, Mom and Dad boarded a plane to Cabo San Lucas, Mexico and you stayed back in MN with Nana and Boppa. A mere 24 hours after we left you started vomiting. After the 7th or 8th time, Nana and Boppa took you in to your doctor. You had some sort of violent stomach flu. Between the puking and the shorts-filling, the doc said that they better bring you into the hospital!! So down you went to Children's with Nana and Boppa. They ran tests, gave you fluids via an IV and after many hours sent you on your way with some drugs. A few days and several million diapers later you seemed to be getting better (you stopped puking at least!) and Nana and Boppa seemed to be getting worse! They both caught it! They said you were a great patient and a great care-taker. You helped take care of them when they were sick too. You had popsicles with Boppa and hung out with Uncle Tim when he came over to help. Poor Uncle Tim went home after helping and a few days later was in bed with it too!
At the same time, Mama and Dada were filling their healthy-feeling stomachs til they were overwhelmingly full with margaritas, lobster, clams, fish, crabs, octopus, snails and more! Yum!! They warmed and tanned their bellies in the warm sun and bathed them in the salty ocean.
So, now we are all home. You are still filling your shorts and sometimes your pajamas. But you are happy and full of energy! And, of course, Mama and Dad are sitting here... waiting to see if Poopageddon is going to hit them too!!
